Mussel Fritters

18 Cooked or Smoked Green lipped mussels (chopped)
2 Courgettes (grated)
2 Eggs
3/4 C Flour
3/4 tsp Baking Powder
1 Tbsp Spring Onion (finely chopped)
1 Tbsp Coriander (finely chopped)
2 Cloves Garlic (minced)
Pinch Salt
Pinch Ground Black Pepper
1/2 Lemon (juice)


Mix together eggs, lemon juice, baking powder and flour. Once a thick batter has been formed add mussels, courgettes, spring onion, coriander, garlic, salt and pepper

Place butter into pan and melt, spoon mixture into pan making a small pancake. Cook on medium heat for 3 minutes each side

Serve with Aioli or garlic infused mayonnaise
